This hollow edge Santoku boasts a precision-forged blade of Wusthof's own high-carbon, stain-resistant steel alloy, for a lasting edge that is easy to resharpen.  The Santoku knife is styled after the Japanese Cook's knife and is just right for prepping not only Asian but also Western cuisine.  The hollow edge creates pockets of air which prevent food from sticking to the blade as you cut.  7"" blade length.
